Because of its chemical characteristics olive oil is very good for cooking because it withstands temperatures much higher than those generally reached on kitchen stoves (its smoke point is about 210°C [410°F] while frying temperature reaches about 180°C or 365°F). Seed oils, margarine or butter do not withstand these temperatures and deteriorate, creating toxic substances that bind with the foodstuff that is eaten.
