The Consorzio Chianti Classico Olio DOP presents the 2025 new harvest with NOVO, an exclusive evening celebrating our extra virgin olive oil as the star of fine dining.
This year, marking the 50th anniversary of the Consortium’s foundation, the historic Teatro Niccolini will host Chef Andrea Perini, known as the chef all’extravergine of Ristorante Al 588 and a leading figure in cuisine centered on high-quality olive oil.
He will guide guests through a four-course menu paired with different types of Chianti Classico Olio DOP and a curated selection of wines from the Consorzio Vino Chianti Classico.

- Shaved Parmigiano with roasted almonds and coarse salt
- Savory vegetarian basket
- Savory cornet with Chianina IGP tartare and mustard
Plated Menu
- Beef sashimi served with three different Chianti Classico DOP oils
- “Faux” celeriac risotto with its jus, Galaverna fondue, and pollen
- Venison sirloin with borlotti bean purée and young spinach shoots
- White chocolate cream dessert with peppers, strawberries, and goat yogurt espuma
